Hi everyone! Welcome back. With the start of the new school year,there will be some hungry tummies at the end of the day. I have a recipe for a light,easy to make lemon cake that won’t break the budget and makes a lovely dessert or something to nibble on while taking a break from homework.
You will need:
1 1/2 cups self raising flour
1 1/2 cups brown sugar
2/3 cup of full cream milk
Juice and zest of 2 large lemons
1 cup water
Pinch of salt
Preheat oven at 180 deg C.
Lightly grease a 22cm by 5.5 cm cake tin or dish.
In a mixing bowl sift the flour and salt.Add half of the sugar and the zest of one lemon.
Mix the juice of one lemon with the milk until it curdles.Add the beaten egg to the milk mixture.
Add the milk mixture to the dry ingredients and beat until smooth. Pour into greased cake dish and bake at 180deg for thirty minutes or until golden brown and a knife pierced through the cake comes out clean.
In a small saucepan,mix the water,the rest of the sugar,juice and zest of the second lemon and bring to the boil. Simmer until the syrup thickens slightly. Pour over the cake.
Serve warm with custard.
